- Ingredients
- Thick cut bacon
- Brown sugar
- Sriracha from Melindas Food
- Pork BBQ rub from Blazing Star BBQ
- Pickles from Mt. Olive
- Instructions
- Pre-heat smoker or oven to 350F
- Line a baking tray with foil for easy cleaning.
- Dump about 1 cup of brown sugar onto tray. Use more if needed.
- Place a strip of bacon into tray and cover with brown sugar, rubbing the sugar into the bacon.
- Place sugar covered bacon onto a wire rack.
- Season w/ Pork BBQ rub.
- Drizzle some Sriracha onto each strip of bacon for spice and flavor.
- Place pickle slices onto bacon. Used about 3 per strip. The more you use the more moisture you’ll bring into the bacon making it less crispy.
- Place into smoker on the top rack and smoke for about 3o min. All smokers are different so keep checking bacon. Once bacon edges start burning remove from smoker.
- Let come to room temp then place into the fridge for about 5-10 min. This step is optional. If you like your bacon warm skip this step.I did this to get it more stiff and crunchier.
