- Ingredients
- 4-5 lbs whole chicken wings
𝙈𝙖𝙧𝙞𝙣𝙖𝙙𝙚:
• 1 tbsp ginger paste
• 1 tbsp garlic paste
• 1 tbsp lemongrass paste
• 1 c cane vinegar
• 1/2 c calamansi juice or lemon juice
• 1 c soy sauce
• 1/4 c brown sugar
• 1 tsp salt and pepper
• 1 c Sprite
𝘽𝙖𝙨𝙩𝙚:
• 1/2 cup butter
• 4 tbsp Annotto oil or Achiote oil w/ Annotto
• 1 tbsp calamansi juice or lemon juice
Dipping Sauce- Spicy Vinegar
- Instructions
- Score chicken wings to let marinate penetrate deep.
- To a large bowl add in all marinade ingredients and mix well.
- Add in chicken wings. Make sure wings are submerged. Cover with plastic wrap and place into the fridge for at least 1 hour.
- Get your grill or smoker fired up using charcoal and applewood.
- Place wings on the grill and also place a cast iron pot to heat up then close grill.
- After about 5-10 mins add basting ingredients to pot and mix.
- Baste chicken then flip and baste again.
- After chicken has been cooking for 5-10 flip and baste some more. The more the better.
- When done top it off with leftover hot basting oil that has been sitting on the grill cooking to prevent bacteria and serve with spicy vinegar.
