- 1 c Calamansi juice or lemon juice
- 6 cloves garlic, minced
- 1 tbsp black peppercorns
- 1 tbsp brown sugar
- 2 tsp annatto powder *optional
- 4 bay leaves

- 2 tbsp coarse black pepper
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp dried oregano
- 1 tbsp brown sugar
- 1 tsp annatto powder *optional

- 10 cloves garlic minced
- 4-6 c of day old rice
- 2 tbsp low sodium soy sauce
- 1 tbsp fish sauce
- 2 tsp white pepper
- 1 c grab meat
- 4 eggs
- 2 tbsp green onions
- Instructions

- Marinate overnight or at least 2hrs
- Β @wsauceofficial as a binder then season
- Let @meatermade to 170F
- Smoked at 250F in my @chargrillergrillsGravity Fed 980 using @jealousdevilcharcoalMax briquettes and @cutting.edge.firewoodOak 4-6hrs
Remove then cube up, place back into marinade, cover then back on the grill for an additional 3-4 hrs until probe tender or at 203 internal

- In a pot on medium high heat add in 2-3 cups of marinade
- Stir in 1 cup brown sugar, 1 cup cane vinegar, 2-3 tbsp honey
- Reduce to half then add in 1/2 cup cornstarch slurry
