Adobo Pork Belly Burnt Ends

Prep Time: 30 Min | Cook Time: 4.5 hrs

🔥3lbs pork belly 1in cubes
🔥1 cup low sodium soy sauce
🔥1 cup cane or coconut vinegar
🔥1/2 cup brown sugar
🔥3 tbsp honey
🔥1 tbsp black peppercorns
🔥3 bay leaves
🔥1 sliced onion
🔥6 cloves of garlic minced
🔥cornstarch slurry (equal parts cornstarch and water)

🔥In a large bowl add in soy sauce, cane vinegar, onion, peppercorns and bay leaves
🔥Mix and add in pork belly and marinate for at least an hour
🔥Remove pork belly and pat dry
🔥Place on a wire rack and season w/ SPG
🔥Smoke @250 for 2hrs
🔥Transfer to a aluminum tray
🔥Pour in Adobo marinade and minced garlic
🔥Cover and braise @250 until internal temp of pork belly is 200-203 around 2hrs
🔥When done separate pork belly from marinade
🔥Strain adobo marinade into a medium size pot
🔥On medium heat add in brown sugar, honey and cornstarch slurry and bring to a rolling boil
🔥Cook until you get the thicknesses you prefer
🔥Coat pork belly with Adobo sauce then back onto the smoker for 15min to rack up
🔥When done top with more Adobo sauce, crispy fried garlic and green onions. 🤙🏽
