Armadillo Eggs

  • 1lbs ground beef
  • 1 pack of bacon
  • 2 large jalapeños 
  • 1 block of cream cheese
  • 1 cup of shredded cheddar cheese
  • 2 tbsp BBQ seasoning
  • BBQ sauce

  1. Get your smoker fired up to 250F using hickory wood for smoke
  2. Slice jalapeños in halves long ways and remove veins and seeds. Optional, minced veins and seeds and add back into mixture for more spice
  3. In a bowl add in softened cream cheese, cheddar cheese and BBQ rseasoning then mix well.
  4. Add mixture into both halves of the hallow jalapeño then bring both halves together.
  5. Take about 1/2 lbs of ground beef and place flat onto a flat surface like your going to make a flat hamburger.
  6. Place jalapeño into the center and wrap the ground beef completely around the jalapeño. Squeezing lightly to pack the ground beef around the jalapeño.
  7. Lay out several strips of bacon on a flat surface about the length of the armadillo egg.
  8. Place armadillo egg on top and at one end of the bacon strips. Add one bacon strip on top of the armadillo egg and tuck it under on both ends, than wrap armadillo egg in the bacon in a rolling motion from one end to the other. Making sure its rolled tightly.
  9. Season the outside of the armadillo egg with BBQ seasoning
  10. Place into smoker and cook until beef reads an internal temp of around 140F and bacon is fully cooked. Spin the armadillo eggs halfway to cook both ends evenly.
  11. When armadillo eggs reach 140F lather on BBQ sauce and smoked for another 5-10 mins for sauce to adhere.
  12. When done remove and let rest for 5-10min the slice up and enjoy.
