Beef Cheek Lumpia w/ Chimichurri

  • Beek Cheeks
  • Salt, pepper, garlic powder
  • beef broth
  • lumpia wrappers or spring roll wrappers, both found in Asian markets

Chimichurri

  • 1 cup Italian parsley
  • 1 cup cilantro
  • Half a bulb of garlic
  • 1-2 jalapeños w/ seeds *optional
  • Half a shallot
  • 1 tbs garlic powder
  • 1 tbs onion powder
  • 1 tbs coarse black pepper
  • 1 tbs kosher salt
  • 1 tbs red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil or more if too thick
  • 1/2 of a lime juice
  • 1 tsp of the lime zest
  1. seasoned beef cheeks w/ SPG
  2. monitoring temps w/ my @meatermade
  3. smoked in my @chargrillergrills Gravity Fed 980 at 250 till an internal of about 180 roughly 4hrs over @jealousdevilcharcoal
  4. wrapped in foil with beef broth until 205 internal roughly 2hrs
  5. let rest for an hour
  6. shred then rolled in spring roll/lumpia wrappers w/ provolone cheese
  7. fried in 350 degree oil for about 2 mins on each side

Chimichurri

  1. Chop or blend all ingredients then mix in a bowl
