- beef broth
- lumpia wrappers or spring roll wrappers, both found in Asian markets
Chimichurri
- 1 cup Italian parsley
- 1 cup cilantro
- Half a bulb of garlic
- 1-2 jalapeños w/ seeds *optional
- Half a shallot
- 1 tbs garlic powder
- 1 tbs onion powder
- 1 tbs coarse black pepper
- 1 tbs kosher salt
- 1 tbs red pepper flakes
- 1/4 cup red wine vinegar
- 1/2 cup olive oil or more if too thick
- 1/2 of a lime juice
- 1 tsp of the lime zest
- Instructions
- seasoned beef cheeks w/ SPG
- monitoring temps w/ my @meatermade
- smoked in my @chargrillergrills Gravity Fed 980 at 250 till an internal of about 180 roughly 4hrs over @jealousdevilcharcoal
- wrapped in foil with beef broth until 205 internal roughly 2hrs
- let rest for an hour
- shred then rolled in spring roll/lumpia wrappers w/ provolone cheese
- fried in 350 degree oil for about 2 mins on each side
Chimichurri
- Chop or blend all ingredients then mix in a bowl
