- Thick Cut Bacon from Tender Belly
- 1 cup cane vinegar
- 1 cup low sodium soy sauce
- 1 cup brown sugar
- 1 whole garlic minced
- 1 tbsp peppercorns
- 2 bay leaves
- Melinda’s Hot Honey
- Crispy fried garlic for garnish

- Instructions
- Add all ingredients into a food safe container with a lid except bacon then mix.
- Now add in bacon, mix, place lid on and store in the fridge for 2hrs (overnight preferred)
- When ready remove bacon from marinade and pat dry.
- Place bacon on a wire rack.
- Top with brown sugar and hot honey.
- Place rack into a pre-heated smoker set to 300F for 1hr. Check periodically so bacon does not burn and overcook.
- When done remove and let cool.
- Top with more hot honey and crispy friend garlic then enjoy.
