Chili and Beer Cheese Dog

  • Hot Dogs
  • Texas Chili from RC Ranch
  • Hot Dog Buns
  • 2 tbsp salted butter
  • 3 tbsp all purpose flour
  • 3/4 cup whole milk or half and half
  • 1/2 can of beer
  • 1 tbsp W-Sauce Worcestershire
  • 1 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Kosher salt to taste
  • 2 1/2 cups fresh shredded sharp cheddar cheese

  1. Use Slotdog to get more surface area inside for smoke and more crisp
  2. Smoke dogs and chili on smoker at 350F for about 30-45 min
  3. In a pan on medium heat add butter
  4. Once melted down whisk in flour until clumpy
  5. Add in milk while continuing to whisk
  6. Add dijon mustard, wocestershire sauce, paprika and beer
  7. Then add cheese and whisk until creamy and dreamy
  8. Salt to taste
