Prep Time: 30 Min | Cook Time: 4-5 hrs

  1. Butterfly open the pork belly as evenly as possible
  2. Sauce as a binder then seasoned
  3. Roll it up the tie it down w/ butchers twine
  4. Skewer it then slice it up
  5. Season some more then sear it to build that crust
  6. Smoke at 250 for 3-4 hours until it is probe tender or at around 200 internal
