- Salt
- Pepper
- Garlic powder
- Instructions
- preheat smoker to 225
- score the skin then season w/ salt
- season meat side w/ SPG
- get your #MEATERmade probe in and set done temp to 130
- place in the smoker till it reaches around 115
- remove and place in a cold pan skin side down
- turn the burner to medium heat and render that fat and crisp that skin
- remove at around 125-130 internal and let rest for 10-15 min or until the internal temp reaches 130-135
- slice up and hit it with some Sriracha flakey salt by @osmosalt
