Reverse Seared Duck Breast

Prep Time: 10 Min | Cook Time: 1.5 hrs

  • Duck breast w/ skin on
  • Salt
  • Pepper
  • Garlic powder
  1. preheat smoker to 225
  2. score the skin then season w/ salt
  3. season meat side w/ SPG
  4. get your #MEATERmade probe in and set done temp to 130
  5.  place in the smoker till it reaches around 115
  6. remove and place in a cold pan skin side down
  7. turn the burner to medium heat and render that fat and crisp that skin
  8. remove at around 125-130 internal and let rest for 10-15 min or until the internal temp reaches 130-135
  9. slice up and hit it with some Sriracha flakey salt by @osmosalt
