Smoked Air Fried Chicharron w/ Habanero Chimichurri

Prep Time: 20 Min | Cook Time: 2.5 hrs

  • Pork belly w/ skin on
  • Lemon pepper seasoning

𝙃𝙖𝙗𝙖𝙣𝙚𝙧𝙤 𝘾𝙝𝙞𝙢𝙞𝙘𝙝𝙪𝙧𝙧𝙞:

  • 2 habanero’s
  •  1 whole garlic bulb
  •  1 small shallot
  •  1 cup/bunch parsley
  •  1 cup/bunch cilantro
  •  1 lime zested and juiced
  •  1 tbsp kosher salt
  •  1 tbsp coarse ground pepper
  •  1 tbsp red pepper flakes
  •  ¼ cup red wine vinegar
  •  ½ cup olive oil add more if too thick
  1. Cut some slits into pork belly for more surface area for smoke, seasoning and crust
  2.  Season w/ Lemon Pepper
  3.  Wipe down skin and sprinkle some kosher salt to help draw out moisture in skin during cooking
  4.  Smoke at 250 for 2 hrs then remove
  5.  Preheat your air fryer to 390 then place in your pork belly strips and cook for 3-5 min per side give or take. Till you see the skin start to bubble up and get crispy
  6.  Slice them up and op with chimichurri
