- 4 Chicken Thighs
- Bear & Burton’s Special Reserve Everyday Hot Sauce
- 1 cup potato starch
- 2 cups beef tallow
- 1 tsp dried dill
- 1 tsp granulated garlic
- 1 tsp everything but the bagel seasoning
- Crispy fried garlic *optional for garnish
- Diced scallions *optional for garnish

- Pat dry chicken thighs, then coat in hot sauce as a binder.
- Season both sides with Blazing Star BBQ Pork’N Rub
- Smoke at 350F until it reaches an internal temp of 170F then remove.
- For your dry batter, to a bowl add in 1 cup of potato starch and 2 tbsp of Blazing Star Pork’N Rub and mix well.
- Spay each chicken thigh with oil for dry batter to stick then dunk into dry batter and coat both sides. Place on a wire rack’
- In a cast iron skillet on medium heat add in 2 cups of beef tallow.
- Fry chicken thighs soon both sides for about 1-2 min until batter is golden brown. When done place back onto wire rack] to cool.
- In a large squeeze bottle or bowl add in ingredients as shown in your Honey Money Wing Kit and mix well.
- Drizzle Honey Money sauce over thighs and garnish with crispy fried garlic and scallions then enjoy!
