Red Chimichurri over Frog Chicken

Prep Time: 30 Min | Cook Time: 1.5 hrs

  • 2 Chipotle in adobo sauce
  • 1 habanero 

  • 1 shallot
  • 1 cup roasted red peppers
  • ½ cup packed fresh parsley or cilantro. They both work great. Depends on your preference.
  • ¼ cup red wine vinegar

  • 1 tbsp smoked paprika

  • 1 whole garlic cloves peeled

  • ½ fresh lime juice

  • 1 tbsp black pepper

  • 1 tbsp salt
  • 1 tbsp crushed red pepper flakes

  • ½ cup olive oil good quality
  1. Mince all ingredients and add to a bowl
  2. Add in your dry seasonings
  3. Add in your vinegar and oil then mix
  4. You can also add everything into a blender for a more emulsified version but I prefer mine chunky.
  5. Spatchcock the chicken Froggy style
  6. Using olive oil as a binder
  7. Seasoned w/ SPG
  8. Got it on my smoker at 350 till an internal temp of 165
