Kare Kare (Filipino Peanut Sauce) Wings

𝙍π™ͺ𝙗:

  • 1 tsp kosher salt
  • 1 tsp coarse black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp annotto powder

    π™†π™–π™©π™š π™†π™–π™§π™š π™Žπ™–π™ͺπ™˜π™š:
  • 1 Shallot minced
  • Lots of minced garlic
  • Annotto powder 1 tbsp
  • 1/2 c peanut butter
  • 1/2- 1 c Chicken stock till smooth
  • 1 tbsp Bagoong (fermented shrimp paste)
  1. Score wings for rub and sauce to penetrate to the meat for maximum flavor *optional
  2. Coat in olive oil then rub. Mix throughly into the meat.
  3. Placed wings onto my @chargrillergrills Akorn and using the @vortex_cooking charcoal ring for indirect heat distribution.
  4. Place a applewood wood chunk in the center for smoke
  5. Cooked these wings at around 500F+ for about 15-20min until crispy.
  6. In a pan on medium heat add in olive oil then minced shallots and garlic and cook till fragrant.
  7. Add in annotto powder, peanut butter, chicken stock. Simmer for a couple minutes then add in bagoong paste and mix.
  8. Simmer for an additional 5 min the shit off heat.
  9. Coat wings or use as a dipping sauce and enjoy πŸ€™πŸ½
