Tocino Pulled Pork Sandwich

𝙈𝙖𝙧𝙞𝙣𝙖𝙙𝙚:

  • 1 c cane vinegar
  • 1/2 c soy sauce
  • 1 c brown sugar
  • 3 8oz cans of real mango juice
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground pepper
  • 2 tbsp minced garlic
  • 1 tbsp rice flour
  • 5-6 drops of Red food coloring (optional)
  1.  Slice pork into thick steaks to help marinade penetrate
  2.  Cover and marinate in the fridge for 24hrs
    Preferably 48hrs
    *Make sure to save marinade
  3.  Pat dry then season w/ @chudsbbq SPG and @meatchurch Honey Hog
  4.  Insert @meatermade wireless meat thermometer then smoke @ 300F for 2-4 hrs on my @chargrillergrills Gravity Fed 980 or until internal temp reaches 180F or when you’ve formed a nice bark. Tocino is a must with bark or char 💯
  5.  Place pork in a pan and pour in leftover marinade about half way. Cover then back on the smoker until internal temp reaches 200 around 2 more hrs
  6.  Let rest for 1-2 hrs then shred
  7.  On a brioche bun add mayo, pickled cucumbers, tocino pulled pork and an over easy egg then enjoy the best breakfast pulled pork sandwich!
