- American Wagyu Tri-Tip from RC Ranch
- Wooden Skewers
- Crimini Mushrooms
- Little Yellow Potatoes
- 6 tbsp roasted minced garlic
- 1 tbsp finely chopped rosemary
- 1 tbsp finely chopped thyme
- 6 tbsp salted butter
- 1 tsp freshly cracked black pepper

- Pre soak skewers for 1 hour prior to cook
- Boil potatoes until fork tender about 10-15min
- Fire up smoker to 225F using hickory wood
- Cut up trim tip into 1 in cubes against the grain
- Add tri tip, mushrooms and potatoes to skewers in whatever order you prefer
- Drizzle olive oil as a binder then season with salt pepper garlic
- Smoke indirect for 20 min
- After 2o min get grill set up for direct cooking
- Mix melted butter, Garlic, Thyme, Rosemary and pepper in a bowl
- Place skewers onto grill over the coals and bastes with garlic herb butter
- Flipping every min and basting
- When tri tip pieces reach an internal temp of 135 remove and let cool. Topping with leftover garlic and herb butter
