Adobo BBQ Chicken

Prep Time: 24 hrs | Cook Time: 2 hrs

• 1c soy sauce
• 1c white vinegar
• 1c water
• half a white onion
• 1 build of garlic
• 1 jalapeño
• 5 bay leaves
• 1c brown sugar
• tbsp honey
• 1 whole spatchcock chicken

1. To a large pot add soy sauce, vinegar, water, onion, jalapeño, bay leaves, garlic.

2. Mix well and place chicken inside and marinate overnight

3. Get your smoker to about 250-275

4. Place chicken into smoker and close lid

5. Bring marinade and everything inside to a slow boil on low heat.

6. Once it comes to a boil strain till your left with just the sauce.

7. Add brown sugar and honey. Then reduce to about half

8. Once your chicken reaches 165 internal in the thickest part of the breast. Baste entire chicken with sauce then cook till chicken reaches 170 internal. Outside will get black due to the sugar in the sauce. So don’t let it get too black. Then remove.

9. Let rest for 15 min. Baste with more sauce. Cut up chicken and enjoy.
