π™ˆπ™–π™§π™žπ™£π™–π™™π™š:

  • 2 lbs brisket, cut into chunks
  • 2 c low sodium soy sauce
  • 1 c Calamansi juice or lemon juice
  • 6 cloves garlic, minced
  • 1 tbsp black peppercorns
  • 1 tbsp brown sugar
  • 2 tsp annatto powder *optional
  • 4 bay leaves

𝙍π™ͺ𝙗:

  • 2 tbsp kosher salt
  • 2 tbsp coarse black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried oregano
  • 1 tbsp brown sugar
  • 1 tsp annatto powder *optional

π˜Ύπ™§π™–π™— π™π™§π™žπ™šπ™™ π™π™žπ™˜π™š:

  • 10 cloves garlic minced
  • 4-6 c of day old rice
  • 2 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 2 tsp white pepper
  • 1 c grab meat
  • 4 eggs
  • 2 tbsp green onions

π˜½π™§π™žπ™¨π™ π™šπ™© 𝙄𝙣𝙨𝙩𝙧π™ͺπ™˜π™©π™žπ™€π™£π™¨:

  1. Marinate overnight or at least 2hrs
  2. Β @wsauceofficial as a binder then season
  3. Let @meatermade to 170F
  4. Smoked at 250F in my @chargrillergrillsGravity Fed 980 using @jealousdevilcharcoalMax briquettes and @cutting.edge.firewoodOak 4-6hrs

Remove then cube up, place back into marinade, cover then back on the grill for an additional 3-4 hrs until probe tender or at 203 internal

π™‚π™‘π™–π™―π™š:

  1. In a pot on medium high heat add in 2-3 cups of marinade
  2. Stir in 1 cup brown sugar, 1 cup cane vinegar, 2-3 tbsp honey
  3. Reduce to half then add in 1/2 cup cornstarch slurry

    Garnish:
    β€’Crispy fried garlic and scallions
