BBQ Adobo Spareribs

Prep Time: 30 Min | Cook Time: 3.5 hrs

• 1 rack of spareribs
• 1 cup low sodium soy sauce
• 1 cup coconut vinegar or white
• 2 tbsp garlic paste
• 1 tbsp coarse ground pepper or peppercorns
• 1/2 white onion
• 3-4 bay leaves
• 1 cup brown sugar

1. Add soy sauce, vinegar, garlic paste and pepper to a bowl and mix

2. Place ribs in a shallow pan and poor in mixture. Add onions and bay leaves.

3. Cover and marinate for at least an hour.

4. Take ribs out and coat w/ BBQ rub

5. Smoke indirect at 275-300 for 3 hrs

6. Add marinade to a pot on medium heat and bring to a boil.

7. Let simmer for 10-15 min then remove onions and bay leaves.

8. Add brown sugar and reduce till it’s thick enough to coat the back of a spoon.

9. After 2 1/2 hours coat ribs with adobo glaze and cook for 30 min or until internal temp reaches about 195-200 then remove and let rest for 15 min.

10. Slice up and top with a drizzle of the Adobo glaze, crispy fried garlic and green onions. Enjoy 🤙🏽
