Beef Cheek and Veggie Lumpia

Prep Time:  30 Min | Cook Time: 2.5 hrs

•spring roll papers
•beef cheeks
•shredded carrots
•white onion minced
•minced garlic
•pinch salt
•pinch pepper
•spicy soy sauce or regular (I used @tacticalories Ghost and Garlic Soy Sauce)
•green onion diced

1. Coated w/ @rubcitybbq Date Night then Smoked beef cheeks for 6hrs @ 225 on my @chargrillergrills Gravity Fed 980

2. Place in a pan add beef broth and onions. Braise @225 for 2hrs

3. When beef cheeks are done. Let rest for a hour

4. On a medium heat pan. Add some olive oil

5. Add in carrots, onions and minced garlic. Sweat them down and add salt, pepper and soy sauce

6. Then add green onions and turn off heat.

7. Shred beef cheeks. Remove an fat that didn’t fully render.

8. Add shredded beef cheeks and veggies to a bowl and mix

9. On a single spring roll add about 2-3 tbsp of mixture

10. Roll up and wet the tip with a watered down egg wash
mixture. Acts like a glue

11. Fry @ about 350 degrees till golden brown. About 1-2 min each side

12. Serve with sweet and sour sauce or spicy vinegar and soy sauce mixture.
