- Ingredients
- 1 whole chicken
- My Cajun Honey Rub
Cajun Cowboy Butter
- 1 stick (8 oz) unsalted butter
- 1 head of garlic, peeled and minced
- 1 small shallot minced
- 2 tbsp Dijon mustard
- 1 tsp smoked paprika
- Pinch of cayenne pepper
- Juice of half a lemon
- 2-3 tbsp of my Cajun Honey Rub
- 1 tbsp hot sauce
- 2 tsp minced fresh thyme
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- 1 tsp coarse ground black pepper
- Instructions
- Remove spine from chicken then split in half.
- Spray duck fat as a binder then season generously with my Cajun Honey Rub.
- Smoker at 250F for 1-2 hrs until internal temperature is 165F then remove.
- For the Cajun Cowboy butter, Melt butter in a skillet on medium heat.
- Add in all ingredients then mix. Cook for 2 mins then remove from heat. Add more Cajun Honey rub for more heat and flavor as it is low in sodium.
- Pour over or dip the chicken in the sauce and enjoy!
