Cajun Cowboy Butter Chicken

  • 1 whole chicken
  • My Cajun Honey Rub

 

Cajun Cowboy Butter

  • 1 stick (8 oz) unsalted butter
  • 1 head of garlic, peeled and minced
  • 1 small shallot minced
  • 2 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • Pinch of cayenne pepper
  • Juice of half a lemon
  • 2-3 tbsp of my Cajun Honey Rub
  • 1 tbsp hot sauce
  • 2 tsp minced fresh thyme
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • 1 tsp coarse ground black pepper

 

  1. Remove spine from chicken then split in half.
  2. Spray duck fat as a binder then season generously with my Cajun Honey Rub.
  3. Smoker at 250F for 1-2 hrs until internal temperature is 165F then remove.
  4. For the Cajun Cowboy butter, Melt butter in a skillet on medium heat.
  5. Add in all ingredients then mix. Cook for 2 mins then remove from heat. Add more Cajun Honey rub for more heat and flavor as it is low in sodium.
  6. Pour over or dip the chicken in the sauce and enjoy!
