Crispy Smoked Pork Belly

Prep Time: 30 Min | Cook Time: 3-5 hrs

  1. Score meat side of the pork belly for more surface area for smoke and seasoning
  2. Drizzle some olive oil as a binder then season liberally w/ a low sodium rub
  3. Flip pork belly over and wipe dry
  4. With meat tenderizer poke dozens of holes all over the skin side
  5. Add a thick layer of kosher salt over skin, trying not to get too much on the meat.
  6. Place in a pre-heated smoker set to 250F for about 3-5hrs or until a probe or toothpick slides into meat and fat like melted butter. Or when meat reaches an internal temp of roughly 195F
  7. Remove salt and place in oven on Broil until skin is crispy or in infrared grill set to around 800F. Makes sure to watch the pork belly during this process to prevent skin from burning.
  8. Remove then slice up and serve w/ a Spicy Vinegar.
