Easy Cajun Jambalaya

Prep Time: 15 Min | Cook Time: 40 Min

•12 oz. Andouille sausage
•1/2 lb peeled shrimp
•2 tbsp Cajun/Creole seasoning 
•1 green bell pepper chopped
•1 tsp smoked paprika
•1 tsp dried oregano
•1 tsp dried thyme
•1 tsp garlic powder
•1 tsp onion powder
•1 tsp ground pepper
•1 15oz. can of fire roasted diced tomatoes
•1 cup long grain white rice
•1 1/2 cups chicken broth
•2 green onions, sliced for garnish

1. Heat up skillet on medium heat

2. Season shrimp with Cajun seasoning

3. Add shrimp to skillet and cook about 1 min per side then remove and set aside

4. Add andouille sausage and cook till brown

5. Add in bell peppers and sauté for a min or 2

6. Add in spices, mix and cook for a min

7. Add in fire roasted tomatoes, white rice and chicken stock

8. Stir evenly and scrape the bottom to get all the brown bits

9. Let it get to a boil then turn heat to low and cover for 15-20 min

10. Remove lid and add in shrimp and toss in the smoker for some smoke or oven for 5 min at 300 degrees. At this point you just want some good smoke.

11. Top with green onions and enjoy 🤙🏽
