Grilled Mollejas aka Sweetbread

  1. Season w/ salt only
  2. Get your grill ready for direct heat grilling. You’re going to want to cook these for about an hour or slow with a steady med heat. You don’t want to burn them. They’re almost impossible to overcook. Just have patience. You want a crispy exterior.
  3. Constantly flipping to avoid burning. 
  4. Cut up some lemons and get them also on the grill for better flavor
  5. About halfway through the cook squeeze some lemon juice over the Mollejas on both sides.
  6. When done slice up and top with more lemon juice.
