- Iberico Chorizo and Salchichón meat slices
- Al Frugoni Chimichurri rub
- Salt and Pepper
- Pepper Jack Cheese

- Get your grill fired up and set to a temp of 250F
- Place plastic wrap over meat and pound it flat as best you can
- Season with chimichurri rub
- Add layer of meats then cheese
- Roll it up and wrap tightly with butchers twine
- Coat outside with olive oil as a binder then season with salt and pepper
- Smoke indirect using applewood until internal temp reaches 120F
- Then sear on both sides to form a nice crust then remove when internal temp reaches 135-140F. This is iberico pork and can be eating medium rare.
- Slice up then enjoy!
