Iberico Secreto Pinwheels

Prep Time: 30 Min | Cook Time: 1.5 hrs

  1. Get your grill fired up and set to a temp of 250F
  2. Place plastic wrap over meat and pound it flat as best you can
  3. Season with chimichurri rub
  4. Add layer of meats then cheese
  5. Roll it up and wrap tightly with butchers twine
  6. Coat outside with olive oil as a binder then season with salt and pepper
  7. Smoke indirect using applewood until internal temp reaches 120F
  8. Then sear on both sides to form a nice crust then remove when internal temp reaches 135-140F. This is iberico pork and can be eating medium rare.
  9. Slice up then enjoy!
