  • Rack of lamb
  • butchers twine
  • foil
  • Favorite BBQ Seasoning

  1. Clean up bones. I use a twine method to pull the bones clean. Wrap twine at base of bone where it meets the meat. While making sure the twine is tight around the bone, pull downward to scrape the meat right off the bone.

  2. Remove any silver skin

  3. Score the fat cap

  4. Oil as a binder add your favorite seasoning. I use Roasted Garlic salt by @osmosalt and pepper

  5. Wrap bones in foil to avoid burning and for presentation wise.

  6. Sear rack over fire until you form a nice crust

  7. Slice up rack into individual cuts then sear each one on both sides

  8. Remove when internal temp reaches 135 for medium rare

  9. Topped w/ my famous Habanero Chimichurri (Recipe coming soon)

  10. Hit it with a little bit more of Roasted Garlic Salt and enjoy.
