Peanut Curry Smoked Pork Ribs

Prep Time: 30 Min | Cook Time: 3.5 hrs

Rub ingredients:

• 2 tsp Onion Powder
• 1 tbsp Garlic Powder
• 1 tbsp Ground Ginger
• 1 tsp Curry Powder
• 1 tsp Cinnamon
• 1 tsp Red Pepper Flakes

Peanut Curry Sauce Ingredients:

• 1/2 Cup Water
• 1/4 Cup Brown Sugar
• 3 tbsp Soy Sauce
• 1 tbsp Curry Powder
• 1 tsp Red Pepper Flakes
• 1/2 Cup Creamy Peanut Butter

1. Pre heat smoker or oven to 300 degrees

2. Remove membrane

3. Salt, pepper, garlic on both sides

4. Coat with Dry rub mixture on both sides.

5. Smoke or bake for 1 1/2 hrs uncovered

6. Tightly wrap in aluminum foil and back on the smoker or oven for 1 1/2 hrs

7. Let rest for 30 min then slice into individual pieces

Peanut Curry Sauce

8. Over medium low heat, Add water, soy sauce, brown sugar, curry powder, red pepper flakes and peanut butter. Whisk constantly until sauce thickens

9. Baste with Peanut Curry sauce on all sides and place in a cast iron pan

10. Bake on the smoker or broil in the oven for 5 min

11. Top with freshly cut chives and some flaky salt
