Smoked Fried Hot Wings

Items used in the video

  1. Fire up your Smoker to 300F using Applewood
  2. Olive oil as binder then season wings with your favorite BBQ rub
  3. Get wings on colder side of the grill for indirect smoking and cook until an internal temp of 165F about 45 min
  4. Remove wings then add a cast iron pan on top of coals
  5. Pour in wagyu beef tallow and let oil get to a temperature of 350F
  6. Place wings in and cook for about 1-2 min a side. Do in batches to not over crowd pan
  7. Remove wings then set aside
  8. Add melted butter, FYR GLD hot sauce and lemon juice to a bowl and mix well
  9. Top wings with sauce and garnish with chopped chives and enjoy
