The Pork Trifecta

Prep Time: 40 Min | Cook Time: 2.5 hrs

  • 2 pork loins
  • chorizo
  • shredded Mexican cheese
  • bacon
  • bbq rub

• preheat smoker to 250
• cook chorizo till you start to see the oil separate
• drain oil and let cool
• butterfly your pork loin
• cover in butcher and flatten out
• add cooked and cooled chorizo
• add in Mexican blend shredded cheese
• roll up nice and tight
• close and cover both ends with bacon then wrap the rest of the loin with bacon
• place on a wire rack and coat in your favorite BBQ rub
• put in your @meatermade wireless thermometer
• then smoke till the internal temp reaches about 120 about 2 hrs
• crank up the smoker to 300 and continue to smoke till internal temp reaches 145 and bacon is perfectly cooked
• let rest for 15-20 mins, slice up and enjoy 🤙🏽
