- Give the little guy a quick blanch to get the tentacles curled up. Just easier to get in the bag. But this step is not necessary.
- Get the lil guy in vacuum seal bag and using my @avidarmor USV32 Chamber Vacuum Sealer to get it sealed up.
- Get your sous vide set to 175°F and submerge that lil guy back into his natural habitat and cook for about 5hrs
- When done remove, olive oil as a binder then season w/ salt and pepper
- On a dipping hot grill sear that lol guy to form some char
- For the lil guys final journey, cut him up and serve w/ chimichurri and enjoy your fruits of labor
