- BBQ Rub
- Beef Broth
- Wagyu tallow
- Instructions
1. Remove silver skin and excess fat
2. Olive oil as a binder
3. Coat w/ your favorite BBQ rub
4. Insert meat probe
5. Smoke @ 250
6. Spritz w/ beef broth every hour
7. When it reaches an internal temp of 170 remove
8. Wrap in butcher paper and add Wagyu beef tallow to both sides of the meat
9. Tightly wrap and re-insert meat probe
10. When it reaches an internal temp of 200 remove
11. Leave it wrapped and rest it for an hour wrapped in a towel or in a cooler.
12. Cut up and enjoy! 🤙🏽
