- Al Frugoni’s All Purpose Asado Rub
- Corn Tortillas
- Diced onions and Cilantro
- Salsa
- Big Uncle Max Pain Hot Sauce

- Remove all silver skin to let seasoning and smoke penetrate the meat and make for a better eating experience
- Olive oil as a binder then season liberally
- Insert meat probes in and set to 200F
- Set smoker to 250F
- Place ostrich leg into smoker
- Every hour baste w/ Al Frugoni Asado Rub mixed with hot water or Beef broth
- When ostrich has a nice and set bark or internal temp is around 180F wrap in aluminum foil and beef tallow
- When internal temp is reached, around 200F remove and place in a warmer or oven at its lowest setting for an hour or when ready to eat
- When ready shred meat and assemble your tacos
