Ostrich Tacos

Prep Time: 30 Min | Cook Time: 4-6 hrs

  1. Remove all silver skin to let seasoning and smoke penetrate the meat and make for a better eating experience
  2. Olive oil as a binder then season liberally 
  3. Insert meat probes in and set to 200F
  4. Set smoker to 250F 
  5. Place ostrich leg into smoker
  6. Every hour baste w/ Al Frugoni Asado Rub mixed with hot water or Beef broth
  7. When ostrich has a nice and set bark or internal temp is around 180F wrap in aluminum foil and beef tallow
  8. When internal temp is reached, around 200F remove and place in a warmer or oven at its lowest setting for an hour or when ready to eat
  9. When ready shred meat and assemble your tacos
