Sous Vide Octopus w/ Chimichurri

Prep Time: 10 Min | Cook Time: 5.5 hrs


  1.  Give the little guy a quick blanch to get the tentacles curled up. Just easier to get in the bag. But this step is not necessary.
  2.  Get the lil guy in vacuum seal bag and using my @avidarmor USV32 Chamber Vacuum Sealer to get it sealed up.
  3.  Get your sous vide set to 175°F and submerge that lil guy back into his natural habitat and cook for about 5hrs
  4.  When done remove, olive oil as a binder then season w/ salt and pepper
  5.  On a dipping hot grill sear that lol guy to form some char
  6.  For the lil guys final journey, cut him up and serve w/ chimichurri and enjoy your fruits of labor
